Carrots with Maple and Balsamic (Air Fryer)

airfryer-mapleroastedcarrotsPerfectly sweet, with hints of balsamic vinegar and cinnamon, these maple roasted carrots are a real crowd pleaser and kids love them. Great as a snack dipped into your favourite sauce, as an appetizer, or as a side dish for Sunday dinner, Easter, Thanksgiving, or Christmas. Make double because they go very quickly.

1 lb carrots washed, peeled, cut in half and then half again lengthways
2 Tbsp. butter, melted
1 Tbsp. pure maple syrup
1 Tbsp. balsamic vinegar
¼ tsp. ground cinnamon
sea salt
black pepper, freshly ground

Preheat the air fryer to 375°F (190°C).

Place your carrots in a large mixing bowl and pour over melted butter, pure maple syrup, balsamic vinegar, cinnamon, kosher salt and black pepper, toss to combine.

Place the coated carrots in the air fryer basket in a single layer and air fry for 20 minutes, shaking halfway through. When the carrots are cooked, they should be fork tender and slightly browned. Remove the carrots from your air fryer basket and serve immediately.

Makes 4 servings.

Cook's Notes:

Storage: Store leftover carrots in an airtight container in the fridge for up to 4 days.
