Bacon-Wrapped Steak Bites (Air Fryer)

airfryer-baconwrappedsteakbitesThis easy recipe for air fryer bacon-wrapped steak bites is one of my favorite steak appetizers or dinner recipes. The bacon gets so crispy while keeping the steak so tender, flavorful and juicy. Can be done in the oven.

1 lb steak, such as beef tenderloin, skirt steak, ribeye or New York strip
8 pieces bacon
sea salt
black pepper, freshly ground

Preheat air fryer to 400°F (200°C) for 5 minutes.

Cut the beef into small, bite-sized cubes, about 1".

Season the beef lightly with salt and pepper. Cut each strip of bacon into thirds or halves. Keep in mind that bacon shrinks during cooking. Wrap the bacon around the beef cubes and secure the overlapping end with a toothpick. Arrange in the air fryer basket or tray.

Airfry for 10 minutes. Flip half-way. This temp and time are good for medium-done steak. If you like your steak medium-rare, cook 3 minutes per side and pre-cook bacon.

Transfer to the plate, sprinkle some chopped parsley, if desired and serve.


Cook's Notes:

  • Choose a tender cut of beef, like filet mignon, ribeye, New York strip, skirt steak, porterhouse or t-bone.
  • Do not overcrowd your air fryer basket. Make sure that there's room around each steak bite to cook in the air fryer.
  • Store steak bites in an air-tight container in the refrigerator. Use within 3-4 days or freeze to reheat for later.
  • If you are concerned about overcooking the steak, pre-cook bacon separately for 4-5 minutes, just before it hardens and gets crispy.
  • Use regular cut bacon or a thin cut. If using a thick cut of bacon, pre-cook bacon for 5 minutes, then wrap each steak piece.
