Watermelon Juice with Lemongrass
Thanks to watermelon's natural sweetness, this drink doesn't call for sugar.
4 lb watermelon, peeled and cut into cubes (12 cups)
1 Tbsp. + 1½ tsp. lemon juice, freshly squeezed
2½ tsp. lemongrass, finely grated
1½ tsp. fresh ginger, finely grated
coarse sea salt
ice cubes
Garnish:
lemongrass stalks, trimmed
Purée watermelon in a blender until smooth. Strain mixture through a fine sieve into a pitcher. Stir in lemon juice, lemongrass, ginger, and 1/8 tsp. salt.
Refrigerate until chilled, about 20 minutes.
Divide juice among 6 ice-filled glasses, and garnish with lemongrass stalks.
Makes 6 cups, serving 6.
