Avocado and Lemon Water (Agua de Aguacate y Limón Amarillo)
Agua de limón, or Key lime water, is probably the most common agua fresca. This recipe is a fun spin on the traditional, using lemons instead of Key limes and adding avocado to acknowledge the very classic combination of citrus and avocado, but out of their normal context. Instead of using Key limes, which are popular in agua fresca, this recipe subs in lemons and adds creamy avocado.
1 avocado, halved
4 cups (32 oz) water (950 mL)
½ cup (4 oz) lemon or lime juice, freshly squeezed (120 mL)
½ cup sugar (100 g)
Scoop the avocado into a blender. Add the rest of the ingredients and blend until smooth. Add more sugar to taste, if desired.
Serve over ice.
