Bread Machine Upside-Down Cake (Pineapple)

breadmachineupsidedowncakehawaiianYou can make a pineapple upside-down cake using a bread machine by putting the topping ingredients at the bottom of the pan and pouring the cake batter right on top before using the cake or quick bread setting.

Topping:
4 Tbsp. butter, melted
¼ cup Erythritol Gold, packed
8-12 pineapple rings or chunks

Cake Batter:
½ cup butter, softened
½ cup Monk Fruit Sweetener with Erythritol (Granular)
1 large egg
1 tsp. pure vanilla extract
½ cup milk
1 cup all-purpose flour, unbleached
1 tsp baking powder
¼ tsp. sea salt

To Serve:
Maraschino cherries

Prepare the Topping: Pour the melted butter and brown sugar into the bottom of the bread machine pan. Arrange the pineapple rings and pieces in a flat layer over the brown sugar. 

Mix Wet Ingredients: In a separate bowl, cream the softened butter and granulated sugar, then mix in the egg, vanilla extract and milk.

Add the Dry Ingredients: Stir in the flour, baking powder and salt until just combined.

Layer the Batter: Carefully spoon and spread the batter directly over the pineapple layer in the bread pan. Remove the kneading paddle first if your machine allows it to avoid a hole in the center of your cake.

Select the MENU button and use the following program settings:

MENU: Cake

Press CONFIRM then the START/STOP button to mix, knead, rise and bake. Put any desired add-ins into the Add-In Tray or add them when the mixer beeps for add-ins.

Cool and invert: When the cycle is complete, remove the bread pan from the machine, let the cake cool inside the bread pan for 10-15 minutes after baking on a wire rack. Place a serving plate upside down over the pan and carefully flip it over. Add maraschino cherries on top of the pineapples before serving.
