Bread Rolls (Easy)

1½ cups milk
1 pkg (3¼ tsp.) dry bread yeast (10 g)
2 Tbsp. sugar
2 tsp. sea salt, divided
5 cups all-purpose flour, unbleached
2 Tbsp. extra-virgin olive oil
2 cups water

Preheat an oven to 350°F (180°C/160°C fan, Gas Mark 4).

Pour the milk into a large glass bowl. Add the yeast, sugar and 1 tsp. salt. Using a rubber spatula, mix well to combine. Add half of the flour and mix. Add the remaining flour and mix again. When it is no longer possible to mix with the spatula, knead with your hands until the dough forms a ball and stays together. it should be very firm and not stick to your hands. Cover with a cloth and let it rest for an hour.

After an hour it should have doubled in size. Punch a hole in the middle and add the oil to the well. Knead again until the oil in incorporated.

Using a knife or pastry cutter, divide the dough into 8 equal parts. Roll each portion with your hands to form a ball.

Boil the water in a large frying pan. Add the remaining 1 tsp. salt and stir gently. Add the dough balls to form a ring. Cook for 3 minutes. Gently remove each dough ball with a slotted spatula and transfer to a glass baking dish.

Using a knife, make two slits on top of each dough ball. Bake in the preheated oven for 25 minutes.
