Fruit Cobbler for Two (Bisquick)
Make just enough hot fruit dessert to share without having leftovers. The buttery crust bakes perfectly aloft the diminutive cups of fruit.
1 cup fruit pie filling, such as apple, peach, cherry or blueberry
½ cup Bisquick
2 Tbsp. milk
1 Tbsp. sugar
1 tsp. butter, softened
Preheat an oven to 400°F (200°C/180°C fan, Gas Mark 6). Divide pie filling between 2 ungreased 10 oz custard cups.
Stir remaining ingredients until soft dough forms. Spoon half of dough onto pie filling in each custard cup. Sprinkle with additional sugar if desired.
Bake 15-18 minutes or until topping is light brown.
Makes 2 servings.
Cook’s Notes: Extra pie filling? It makes a great topper for ice cream, pancakes, waffles and French toast.
