Cheddar Cheese Crackers (Southern)

Whether it was a family gathering, a church potluck, or an impromptu visit from the neighbours, there is always a plate of something savoury and comforting within arm’s reach. These crackers are everything you’d want in a Southern treat - bold, cheesy and unapologetically indulgent. They’re the kind of snack that feels nostalgic yet fancy enough to impress a crowd. Try them paired with a creamy dip, served alongside a cheese platter, or eaten straight out of the tin (my personal favourite).

2 cups sharp cheddar cheese, freshly shredded
8 Tbsp. butter, softened
1 tsp. sea salt
½ tsp. ground cayenne pepper
¼ tsp. black pepper, freshly ground
⅛ tsp. garlic powder
½ cup pecans, finely chopped
1½ cups all-purpose flour, unbleached

In a mixing bowl, beat the cheddar cheese and softened butter until light and fluffy, about 3 minutes.

Add the salt, cayenne pepper, black pepper and garlic powder, mixing until well combined.

Gradually add the flour, ½ cup at a time, stirring after each addition until a dough forms. Note: If your cheese is dry or pre-shredded, stir in 1-2 Tbsp. of ice water to help bind the dough.

Divide the dough into two portions and shape each into a 1" diameter log. Wrap the logs tightly in parchment paper or plastic wrap, twisting the ends to seal. Refrigerate for 30 minutes to firm up the dough.

Preheat your oven to 375°F (190°C/170°C fan, Gas Mark 5) and line baking sheets with parchment paper.

Slice the chilled dough into ⅛" thick rounds and arrange them on the prepared baking sheets, spacing them about ¼" apart.

Bake for 12-15 minutes, or until the crackers are lightly golden brown.

Transfer the crackers to a wire rack and let them cool completely.

Store in an airtight container at room temperature for up to 1 week.

Makes 4 servings.


Variations:

  • For extra spice, add a pinch of red pepper flakes to the dough.
  • You can substitute different cheeses like Monterey Jack or Colby Jack for variety.
  • Change the pecans for a different nut, dried fruit or leave it out completely.
