French Toast with Spring Onions and Chives (English Eggy Bread)
One of my favourite and very quintessentially British winter recipes is the Great British Eggy Bread - just like my Granny from Hertfordshire used to make. It's a simple combo - mostly milk and eggs (and bread of course) with a couple of twists on the classic. The chives and spring onions give it a bit more pep, and if you can get your hands on it then Marmite is what finishes this dish off (and makes it British).
2 eggs
½ handful chives, snipped
1 spring onions, chopped
⅛ cup milk
kosher or sea salt
black pepper, freshly cracked
½ tsp curry powder
2 slices bread
1 Tbsp. butter
To Serve:
marmite
Crack the eggs and mix with the chives and spring onions.
Add the milk, salt, pepper and curry powder and stir well. Transfer to a wide bowl.
Optional for Marmite lovers: Smear marmite on bread before soaking in egg for that extra marmitey and British taste.
Soak each piece of bread in the mixture for a few seconds (making sure the chives and spring onions attach themselves to the bread).
Heat a frying pan on medium heat. Add the butter.
Fry for a minute or twoon each side until nice and crispy.
Makes 1 serving.
