Banana Bread (Whole-Wheat, Coconut and Honey)
A healthy version for those banana bread lovers.
½ cup butter
½ cup pure honey
2 eggs
1¾ cup whole-wheat flour
1 tsp. baking powder
½ tsp. soda
½ tsp. sea salt
1 cup banana, crushed
1 tsp. ground cinnamon
1 cup coconut, toasted
½ cup nuts (optional)
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Grease a loaf pan.
Mix in order given.
Bake for 40-45 minutes.
