Shepherd's Pie (Québec Pâté Chinois)

canadian-quebec-patechinoisI lost count a long time ago of the number of times I ate this both growing up and into my adult life. It is a French-Canadian staple and comfort food. Simple ingredients and a low cost per serving. Some people call this "peasant food", I just call it delicious.

1 Tbsp. butter
1 small onion, chopped
1 lb lean ground beef
sea salt
black pepper, freshly ground
1 can cream corn
1 can whole kernel corn
3 cups mashed potatoes

Preheat an oven to 350°F (180°C/160°C fan, Gas Mark 4).

Sauté onion in butter. Add beef and cook for 5 minutes. Add salt and pepper.

Line a Pyrex dish with the meat. Cover with corn. Top with the mashed potatoes.

Bake for 30 minutes. Remove from the oven and let rest for 10 minutes before serving.

Makes 4-6 servings.
