Green Mayonnaise Sauce (Irish)

An Irish Green Mayonnaise Sauce could also be called "Goes On Everything Sauce", it is that versatile. Mayonnaise is combined with plenty of greens which can be varied to suit your palette or the dish your serving it with.

½ cup spinach, cooked, drained and finely chopped
1 tsp. Dijon mustard
1 tsp. lemon juice, freshly squeezed
1 Tbsp. fresh parsley, chopped
1 tsp. fresh chives, chopped
½ tsp. dried tarragon
½ tsp. dried basil
2 cups Hellmann's mayonnaise

Place all ingredients, except mayonnaise, in a blender  and process until smooth.

Stir into mayonnaise and whisk until smooth.

Makes 2½ cups.
