Chicken Dry Rub
I love well-seasoned chicken and here’s the perfect way to get it. You probably have everything you need for this chicken rub right in your pantry. The only ingredient you may have to buy is ground coriander, but if you have coriander seeds, then just crush those up in a mortar and pestle or spice grinder. You also have a choice of paprika varieties. Use whatever you have on your shelf. I made mine with mild, but hot and smoked would work very well here too. And if you like Shake-n-bake you'll be pleased to know that you can add some panko bread crumbs to this mix and you'll have a very close replica.
1 Tbsp. paprika (hot, mild or smoked)
3 tsp. kosher salt
1 Tbsp. garlic powder
1 Tbsp. brown sugar
½ tsp. cumin
1 tsp. sage
1 tsp. oregano
½ tsp. cayenne
1 tsp. black pepper, freshly ground
½ tsp. ground coriander
Place all ingredients in a bowl and mix well.
Store in an air-tight container
Makes ½ cup.
