Shichimi Togarashi (Japanese)

sesameorangespiceblendShichimi togarashi is a Japanese seven-spice mix. Instead of using dried orange peel, we stripped zest from the fruit and briefly microwaved it to dry it out. Cayenne pepper and black pepper provided a spicy kick, and sesame seeds, paprika, garlic powder, and ground ginger rounded out the mix.

¾ tsp. orange zest, freshly grated
2 tsp. sesame seeds
1½ tsp. ground paprika
1 tsp. black pepper, freshly ground
¼ tsp. garlic powder
¼ tsp. ground ginger
⅛ tsp. ground cayenne pepper

This blend is inspired by shichimi togarashi, the Japanese seven-spice blend. Store the blend in an airtight container for up to one month.

Place orange zest in small bowl and microwave, stirring every 20 seconds, until zest is dry and no longer clumping together, 1 minute 30 seconds to 2 minutes 30 seconds. Stir in sesame seeds, paprika, pepper, garlic powder, ginger, and cayenne.

Serving Suggestions:
Sprinkle over udon or soba noodles, rice, soft-cooked eggs, French fries, or grilled meats.
