Parmesan Cheese Crisps

1 cup Parmesan cheese, finely grated

Preheat the oven to 400°F (200°C/180°C fan, Gas Mark 6). Adjust a rack to the center. Line a rimmed baking tray with parchment paper.

Pile 2 Tbsp. of grated cheese on to the tray, leaving about 2” between the piles. Sprinkle on any herbs or spices if using them.

Bake about 7 minutes until evenly golden, turning the tray once during cooking. Keep your eye on them and take them out when they are evenly golden.

Allow to cool 5 minutes on the tray then transfer them to a paper towel to cool completely. Eat right away or store in an airtight container up to three days at room temperature.

Makes 8 crisps.
