Baked Brie with Cranberries and Pistachios
Perfect for entertaining, this baked brie with roasted cranberry sauce would be excellent as part of a spread of Christmas party appetizers or New Years Eve recipes. Or just as a starter for a romantic dinner.
1 (12 oz) round Brie cheese
1 orange, freshly juiced and zested
2 cups cranberries (fresh or thawed frozen)
1 Tbsp. olive oil
¼ cup + 1 Tbsp. pure honey, divided
½ tsp. pure vanilla extract
1 tsp. kosher salt
Garnish:
¼ cup pistachios, crushed (optional)
To Serve:
whole-wheat crackers or toasted baguette slices
Preheat oven to 425°F (220°C, Gas Mark 7). Line a baking sheet with parchment paper.
In a bowl, combine the cranberries, orange zest, olive oil, 1 Tbsp. honey, vanilla extract, and kosher salt. Place cranberries prepared baking sheet, and roast 12-15 minutes until tender.
Return the cranberry mixture to a bowl and stir in the orange juice and ¼ cup honey. Let stand at room temperature for 30 minutes or more before serving.
When ready to serve, preheat the oven to 375°F.
Bake the Brie for 15 minutes until soft and warm.
Spread the cranberry mixture over the Brie. Garnish with chopped pistachios, if desired. Serve with crackers or toasted baguette slices.
