Coffee Cake (Greenlandic)

greenlandic-coffeecakeYou see, the kaffemik itself is much more than the special coffee or coffee cake that we'll show you here. It is as much about social institution as it is about food. The idea of a kaffemik is to host an intimate gathering with friends and family in which there happens to be yummy foods to snack on and hot drinks to keep warm. As a way to demonstrate status, the host will provide food and drink for the entire kaffemik - sometimes even taking up to several days to prepare - in anticipation of accommodating their local community. Nowadays, it's less for the entire local community and more for your friends and family, but the kaffemik still remains a very intimate, social and localized tradition.

1¼ cups water (about 300 mL)
½ cup active dried yeast (114 g)
½ cup coconut sugar (about 102 g)
½ cup butter (about 115 g)
½ cup raisins (about 84 g)
3 cups pastry flour (about 367 g)
1 tsp. confectioners' sugar (about 3 g)
½ tsp. ground cardamom (about 1 g)
1 Tbsp. milk (about 15 mL)
4 cups coffee, hot (about 960 g)
½ cup whiskey (about 120 mL)
½ cup Kahlua (about 120 mL)
½ cup Grand Marnier (about 120 mL)
¼ cup whipped cream (about 15 g)

Preheat an oven to 400°F (200°C/180°C fan, Gas Mark 6).

Add water and active dried yeast to a clean small bowl without stirring. Set aside.

Add coconut sugar, butter, raisins and water to a clean large mixing bowl. Stir until melted.

Transfer water to dough. Whisk slowly.

Add pastry flour to the dough gradually while whisking. Mix well and set aside and let rise for about 30 minutes.

Knead into a circle for about 3 minutes.

Prepare a clean baking dish. Transfer dough to baking dish. Bake for about 25 minutes.

Add powdered sugar and ground cardamom to a clean small bowl. Combine. Set aside. Brush with milk generously

Transfer sugar mixture to cake then set aside.

Add hot coffee, whiskey, Kahlua and Grand Marnier to a clean glass measuring cup. Mix well with Tbsp.

Slice cake. Pour liquid. Top with whipped cream to taste.

Serve.
