Pineapple Cake (Hawaii)
Bring the tastes of Hawaii to your table with this quick and easy Hawaiian Pineapple Cake. Very easy dessert recipes like this one are perfect for adding a delicious tropical flair to finish off the meal.
1½ cups raw sugar
1 tsp. baking soda
2 cups all-purpose flour, unbleached
2 eggs
1-20 oz can crushed pineapple with juice
1 cup walnuts or pecans, chopped
¾ cup flaked coconut
Preheat oven to 350°F (180°C). Grease a 9x13" pan.
In a large bowl, mix sugar, soda, and flour by hand. Mix in eggs, pineapple with juice. Stir in nuts, and coconut.
Pour into prepared pan and bake for 35-40 minutes.
Cool on wire racks.
Frost with Cream Cheese Icing, cut into squares to serve.
