Great tasting Cowboy Cookies, a yummy treat full of oatmeal, pecans and plenty of chocolate chips to go around.

1 cup all-purpose flour, unbleached
¾ tsp. baking powder
¾ tsp. baking soda
1 tsp. ground cinnamon
¼ tsp. sea salt
6 Tbsp. unsalted butter, softened
⅓ cup light brown sugar
1 egg
1 tsp. pure vanilla extract
1 Tbsp. milk
1 cup old-fashioned rolled oats
1 cup semi-sweet chocolate chips
½ cup pecans, chopped

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4) and grease or line baking sheet with parchment paper.

In large bowl, cream together butter with sugars until fluffy.

Add egg, vanilla and milk and mix well.

Add in flour, baking powder, baking soda and cinnamon and continue to mix until well blended.

Fold in oats, chocolate and pecans.

Using a Tbsp. or cookie scoop, place on prepared cookie sheet 2" apart and bake in the middle of oven for 10-15 minutes or until light golden on edges (longer if you prefer a crispier cookie).

Cool on baking sheet for 2 minutes and then transfer to cooling rack to cool completely.
