Chocolate Chip Cookies (Macadamia Nut White and Semi-Sweet Chocolate)

macadamianutchocolatechipcookiesThese rich cookies are full of Hawaiian macadamia nuts and semisweet chocolate and white chocolate chips.

1 cup butter, softened
¾ cup sugar
¾ cup brown sugar, packed
2 large eggs
1 tsp. pure vanilla extract
2¼ cups all-purpose flour, unbleached
1 tsp. baking soda
1 tsp. sea salt
1 cup macadamia nuts, chopped
2 cups semi-sweet chocolate chips
1 cup white chocolate chips

In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat on medium speed for 2 minutes. Combine the flour, baking soda and salt; add to creamed mixture and beat for 2 minutes. Stir in nuts and chips. Cover and refrigerate several hours or overnight.

Preheat oven to 375°F (190°C/170°C fan, Gas Mark 5).

Drop by Tbsp. 2" apart onto ungreased baking sheets. Bake for 10-12 minutes or until golden brown.

Cool on pans for 1 minute before removing to wire racks; cool completely before serving.

Makes 6 dozen.


Cook's Notes: 2 cups of chopped almonds may be substituted for the macadamia nuts.
