Fruitcake Fudge
This no-bake fudge recipe is packed full of red and green candied cherries and chopped toasted walnuts. Made with melted white chocolate and canned sweetened condensed milk, Walnut Fruitcake Fudge is super easy and fast to make and tastes delicious too.
4 cups white chocolate chips
1 (14 oz) can sweetened condensed milk
1 tsp. pure almond extract
2 cups red and green candied cherries, quartered
1 cup walnuts, toasted, chopped
Before you do anything else, toast the walnuts and allow them to fully cool.
Line a 9x9" baking pan with parchment paper and set it aside.
Add the white chocolate chips, canned sweetened condensed milk and almond extract to a double-boiler. S stirring well with a rubber spatula until the chocolate mixture is creamy and smooth. remove from the heat.
Add in the toasted walnuts and quartered candied cherries. Stir until well combined.
Transfer the mixture to the prepared baking pan and use your spatula to flatten and push it down into the pan, being sure to get into the corners too.
You can set the pan aside for 3-4 hours until the fudge is firm enough to cut into pieces, or you can speed up the process by refrigerating it for 1 hour. Once firm, cut into 1" cubes.
Store in a food-safe container in your fridge.
Makes 81 pieces.
How to Store Fudge Made with Condensed Milk:
- Homemade fudge made with condensed milk is quite soft compared to traditional fudge. This means it should be kept in the refrigerator, if left at room temperature it will soften further.
- You can store this lemon fudge in the fridge in an airtight container for up to 2 weeks.
- You could also store it in the freezer for up to 3 months in an airtight container.
