Fruit and Nut Chocolate Fudge (Cocoa)

This treat combines the rich, smooth texture of chocolate with the sweet tang of dried fruits and the satisfying crunch of nuts. granulated sugar (500 g)
cocoa powder (50 g)
½ tsp. sea salt
full fat milk (225 mL)
2 Tbsp. butter
2 tsp. Madagascar bourbon vanilla bean paste
raw almonds, coarsely chopped (50 g)
sultanas (50 g)

Lightly grease a baking dish - I used a 4x9" silicone bread pan.

Measure the sugar, cocoa powder, salt and milk. Pour into a heavy-bottomed saucepan.

Bring to the boil over medium-low heat, stirring very occasionally. Keep the heat low to prevent the mixture from burning.

After the mixture has been boiling for about eight minutes, start checking the temperature. When it reaches 235°F (112.7°C), it is ready.

Fill your sink with a few inches of cold water.

When the fudge has reached the desired temperature, carefully place the pan in a sink of cold water and beat in the butter and vanilla. Continue to beat until the fudge begins to thicken.

Stir in the fruit and nuts and spoon into your prepared dish.

Leave to set at room temperature for an hour before cutting into small squares.
