Pan-Fried Bananas in Brandy
3 oz butter (90 g)
3 Tbsp. soft brown sugar
3 Tbsp. lemon juice
6 bananas
6 Tbsp. brandy
Put the butter, sugar and lemon juice into a frying pan. Cook over a low heat, stirring continuously, until the butter has melted and the sugar has dissolved.
Peel the bananas and cut them in half lengthways. Add these to the butter and sugar liquid in the pan and fry gently for a few minutes, basting them well with the liquid.
Add the brandy directly to the frying pan and cook for a second or two, to warm the brandy through.
Ignite the brandy carefully and allow the flames to die down before serving the bananas.
Serve with the juices and whipped cream.
