Fried Cheese Balls (Aruban Bolita di Keshi)

aruban-bolitakeshiA kids favourite snack, very easy to make and disappears rather quickly too. Great for parties and family reunions.

1 lb sharp yellow cheese, such as cheddar or oude boerenkaas
1 lb keshi di buriko or any white cheese such as fromage blanc, queso blanco, ricotto or feta
6 eggs, beaten
5 Tbsp. cornstarch
cooking oil, for frying

Finely grate the cheeses and toss together. Stir in eggs and cornstarch. Mix well.

Shape the mixture into small balls. These may be kept indefinitely in the freezer.

Drop the balls into deep, hot fat and fry until golden.

Serve piping hot on toothpicks.
