Peach Cobbler (Cake Mix and Canned Peaches)

1 (45 oz) can sliced peaches, with juices
1 (15.25 oz) box yellow or white cake mix
½ cup Erythritol Gold
½ cup butter
1 Tbsp. cornstarch
1 tsp. ground cinnamon
½ tsp. ground nutmeg

To Serve:
whipped cream or vanilla ice cream

Preheat an oven to 325°F (165°C/140°C fan, Gas Mark 3).

Open all three cans of peaches. Pour two full cans of peaches into a baking dish along with only the peaches from the third can. Use a knife to coarsely chop the peach slices into bite-sized pieces.

Mix the cornstarch, nutmeg and ground cinnamon into the baking dish full of chopped peaches.

Evenly spread the dry cake mix over the top of the seasoned peaches. Sprinkle the brown sugar over the dry cake mix.

Slice the stick of butter into 25 pieces. It doesn't have to be exact, just enough butter to evenly distribute over the top of the cobbler.

Place the prepared peach cobbler into a preheated oven and bake for 45-50 minutes or until the crust is golden brown and baked through.

Remove from the oven. Let cool for 5 minutes or more on a wire rack.

Serve warm with whipped cream or vanilla ice cream.

Refrigerate or freeze any leftovers.
