Sausage and Beans (Massachusetts)
A hearty family favourite which is also easy on the budget and easy meal to prepare.
1½ lbs bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 (31 oz) can pork and beans
1 (16 oz) can kidney beans, rinsed and drained
1 (15½ oz) can great northern beans, rinsed and drained
1 (15½ oz) can black-eyed peas, rinsed and drained
1 (15 oz) can pinto beans, rinsed and drained
1 (15 oz) can chickpeas, rinsed and drained
1½ cups ketchup
¾ cup packed brown sugar
2 tsp. ground mustard
Preheat oven to 325°F. Grease a 13x9” baking dish.
In a large skillet, cook sausage over medium heat until no longer pink; drain. Add green pepper and onion; sauté until tender. Drain. Add remaining ingredients.
Pour into prepared baking dish. Cover and bake for 1 hour. Uncover and bake 20-30 minutes longer or until bubbly.
Makes 12-16 servings.
