Turkey Burger (Mushrooms and Swiss Cheese)
This burger may leave out the beef, but when a juicy turkey patty is mixed with a flavourful mushroom-shallot mixture and then smothered with Swiss cheese, it becomes anything but bland or ordinary.
2 shallots
½ pkg mushrooms, sliced
1 lb ground turkey
½ tsp. sea salt
1 Tbsp. extra-virgin olive oil
4 slice Swiss cheese
1 Tbsp. butter
1 Tbsp. all-purpose flour, unbleached
1 cup beef broth
1 Tbsp. heavy cream
¼ tsp. sea salt
¼ tsp. black pepper, freshly ground
Pulse shallots, quartered, in food processor until chopped; put half in small bowl. To processor, add sliced mushrooms; pulse into bits.
Mix and form mushroom mixture, ground turkey and ½ tsp. salt into four patties. Cook in skillet, in olive oil, on medium-high 8-10 minutes or until 165°F, flipping once.
Transfer to plate. Top each with 1 slice Swiss cheese; keep warm.
Melt butter in skillet on medium. Add remaining shallot and mushrooms; cook 5 minutes. Stir in flour; cook 30 seconds. Add beef broth; cook 5 minutes or until thickened. Add cream and ¼ tsp. each salt and pepper. Serve with burgers on buns.
Makes 4 servings.
