Moose Meatloaf

moosemeatloafThe first (and so far, only) time my husband came home with a moose, I was a bit overwhelmed. There was suddenly an entire deep freeze full of meat - that I had no clue how to cook. He had a few ideas, but since I do most of the meals, I was left searching for recipes. I didn’t find many, so I made sure to jot down my experiments that worked. Here’s the best (so far) meatloaf recipe I’ve made with moose; you could easily do this with ground beef, too.

2.2 lbs ground moose (1 kg)
1 egg, beaten
1 apple, finely diced or shredded
½ onion, diced or shredded
¼ cup breadcrumbs
1 tsp. dried oregano
1 tsp. dried summer savoury
¼ cup maple BBQ sauce

Preheat an oven to 375°F (190°C/170°C fan, Gas Mark 5).

Beat the egg. Add to meat, apple, onion and sauce. Mix gently until combined. Add the breadcrumbs and spices. Mix again.

Form into the pan. Brush sauce over top.

Bake for about 40 minutes.

Serve with garlic mashed potatoes and steamed broccoli - or fiddleheads, if you’ve got ’em.
