Turkey Sausage and Veggie Bake

turkeysausagevegetablebakeAs a working Mom I’ve come to love and rely on recipes that are quick to prepare, healthy and don't require a lot of attention. This recipe is a delicious one-pan dinner than can be prepared ahead of time and cooks up in 20 minutes.

1 medium sweet potato, peeled and chopped
1-2 cups green beans
2 cups Brussels sprouts, halved or quartered if large
2 bell peppers, chopped
4 turkey sausages, cut into 1" pieces
½ tsp. garlic powder
1 Tbsp. dried oregano
1 Tbsp. dried parsley
1 Tbsp. dried rosemary
1 tsp. paprika
6 Tbsp. olive oil
1 tsp. red chili flakes
sea salt
peppercorns, freshly cracked

Optional:
quinoa, rice or pasta
parmesan cheese, grated

Preheat oven to 400°F. Line your baking sheet with parchment paper or non-stick foil.

In a large bowl, add the chopped vegetables and sausage. Add olive oil, herbs and spices. Mix well with your hands and ensure everything is coated evenly.

Place all the vegetables and sausage onto your baking sheet, and spread out in evenly.

Bake for 15-20 minutes, then gently flip and stir everything around. Return to the oven for an additional 15-20 minutes or until the sausage is cooked through and the veggies are tender and crisp on the edges.

Serve over quinoa, rice or pasta and garnish with grated parmesan cheese, if desired.

Makes 4 servings.
