Banana Bread with Chocolate Chips and Flaxseeds (Almond Flour)

3 very ripe medium bananas, mashed (1¼ cups)
3 eggs
3 Tbsp. heavy cream
1 tsp. pure vanilla extract
2½ cups blanched fine almond flour, packed, such as; Bob's Red Mill
½ cup flaxseed/meal
1 tsp. ground cinnamon
1 tsp. baking soda
½ tsp. sea salt
½ cup dark chocolate chips

Garnish:
2 Tbsp. shredded coconut or flaky sea salt

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Line an 8½x4½" loaf pan with parchment paper. Spray the pan with nonstick cooking spray to prevent sticking. Set aside.

In a large bowl, whisk together the mashed bananas, eggs, almond milk and vanilla extract until well combined. Add in the almond flour, flaxseed meal, cinnamon, baking soda and salt. Use a wooden spoon to combine. Fold in the chocolate chips, if desired.

Pour batter into prepared loaf pan, smoothing the top with a spatula. Sprinkle 2 Tbsp. shredded coconut on top.

Bake for 30-40 minutes or until tester comes out clean in the middle of the bread.

Cool bread for 10 minutes in the pan, then remove and transfer to a wire rack to finish cooling completely (at least one hour).

To Serve:
Once cool, cut into 12 slices. Top with butter and sprinkle with a little flaky sea salt or shredded coconut.


Variations (instead of chocolate chips):

  • Add ⅓ cup chopped walnuts or other nuts for additional healthy fats.
  • Add ½ berries, such as; cherries or blueberries for added sweetness and nutrition.
  • Add ½ cup Thompson raisins that have been plumped up after soaking in hot water.
