Brownies (Almond Flour and Protein)
Delicious chocolate brownies made with a whey protein shake use almond flour, coconut oil and coconut sugar for a sugar and gluten-free, protein packed treat.
3 eggs
1 cup coconut sugar
⅓ cup + 2 Tbsp. almond flour
2 Tbsp. cocoa powder
¾ cup + 2 Tbsp. chocolate protein shake
1 tsp. pure vanilla extract
1 dark 80% chocolate bar, broken into pieces
½ cup + 2 Tbsp. coconut oil
Preheat oven to 325°F (165°C/140°C fan, Gas Mark 3). Grease a 9x9" baking pan.
In a medium bowl, combine eggs and coconut sugar. Using a mixer, beat on high speed until light and fluffy, about 3-5 minutes.
Add almond flour, cocoa powder, chocolate protein shake and vanilla extract. Stir until combined.
In a small glass bowl, add chocolate bar and coconut oil. Place over a saucepan with shallow boiling water, making sure that the water does not touch the bottom of the bowl. Stir constantly until the chocolate has melted. Stir and pour into brownie batter.
Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick is inserted into the center and comes out with moist crumbs. The toothpick should not be completely clean.
Remove from oven and let cool completely.
Makes 9 squares.
