Chocolate Banana Macaroons (Protein)
Chocolate banana macaroons are a fun and fruity take on classic coconut macaroons. One bananas and chocolate help add the perfect amount of sweetness to these cookies.
2 bananas, mashed
1 egg
1 cup unsweetened coconut flakes + extra for sprinkling
2 scoops vanilla whey protein powder (39 g)
1 tsp. pure vanilla extract
1 chocolate bar
Preheat an oven to 350°F (180°C/160°C fan, Gas Mark 4). Spray a 12-count cupcake pan with coconut oil.
In a large bowl, mix bananas, egg, coconut flakes, protein powder and vanilla extract.
Distribute batter evenly into prepared pan. Bake for 10-12 minutes.
Once the macaroons are cool enough to handle, melt the chocolate bar in a small double-boiler and dip one side in the chocolate. Sprinkle with coconut.
Place in the fridge until chocolate hardens, then serve.
