Brownies with Chocolate Chips and Cocoa (Almond Flour and Protein)
These healthy protein brownies are ultra rich and fudgy, with up to 15 grams of protein each.
1 cup almond flour
⅓ cup vanilla or chocolate whey protein powder
2 Tbsp. Dutch cocoa powder
1 tsp. baking powder
½ tsp. sea salt
⅓ cup butter or coconut oil, melted
2 large eggs
⅔ cup Monk Fruit Sweetener with Erythritol (Granular)
1 tsp. pure vanilla extract
½ cup mini chocolate chips
Preheat an oven to 350°F (180°C/160°C fan, Gas Mark 4). Grease an 8x8" baking pan, or line it with parchment paper.
In a large bowl combine all ingredients and mix well. Spread into the prepared baking pan, using a second sheet of parchment if needed to press down evenly.
Bake in the preheated oven for 20 minutes. Remove from the oven and let cool on a wire rack. They will continue to firm up as they cool and also firm up even more if you very loosely cover and refrigerate overnight.
Makes 9 brownies.
Cook's Notes: Sprinkle the batter with mini chocolate chips right before baking. Once they come out of the oven, there’s no icing needed.
