Pork Baby Back Ribs with Maple Spice Rub (Instant Pot)
These Instant Pot Baby Back Ribs are a definitely a game-changer... tender, juicy flavourful ribs no matter the weather - in less than an hour.
3 tsp. chili powder, divided
1¼ tsp. ground coriander
1¼ tsp. garlic powder, divided
¾ tsp. sea salt
½ tsp. black pepper, freshly ground
3-3½ lbs pork baby back ribs, trimmed and cut into 4-rib pieces
4 Tbsp. pure maple syrup, divided
1 (8 oz) can tomato sauce
¼ tsp. ground cinnamon
¼ tsp. ground ginger
Combine 1½ tsp. chili powder, coriander, ¾ tsp. garlic powder, salt and pepper in small bowl; mix well.
Brush ribs with 2 Tbsp. maple syrup; rub with spice mixture. Place ribs in Instant Pot.
Combine tomato sauce, remaining 2 Tbsp. maple syrup, 1½ tsp. chili powder, ½ tsp. garlic powder, cinnamon and ginger in medium bowl; mix well. Pour over ribs in pot; stir to coat ribs with sauce.
Secure lid and move pressure release valve to Sealing position. Press Manual; cook at high pressure 25 minutes.
When cooking is complete, use natural release for 10 minutes, then release remaining pressure. Remove ribs to plate; cover loosely to keep warm.
Press Sauté; cook sauce about 10 minutes or until thickened.
Brush ribs with sauce; serve remaining sauce on the side.
