Salmon with Honey Lemon and Garlic (Instant Pot)

5 Tbsp. olive oil
3 Tbsp. pure honey
2-3 Tbsp. lemon juice, freshly squeezed
3 cloves garlic, minced
4 (3-4 oz) fresh salmon filets
kosher or sea salt
black pepper, freshly ground
1-2 Tbsp. parsley, minced (dried or fresh)
lemon slices (optional)

Mix olive oil, honey, lemon juice, and garlic, minced in a bowl.

Place each piece of salmon on a piece of foil big enough to wrap up the piece of fish.

Brush each filet generously with the olive oil mixture.

Sprinkle with salt, pepper, and parsley flakes.

Top each with a thin slice of lemon, if desired.

Wrap each filet and seal well at top.

Place 1½ cups of water in the inner pot of your Instant Pot and place the trivet in the pot.

Place wrapped filets on the trivet.

Close the lid and turn valve to sealing.

Cook on Manual at high pressure for 5-8 minutes for smaller pieces, or 10-12 minutes if they are large.

Carefully release pressure manually at the end of the cooking time. Unwrap and enjoy.
