Bacon-Wrapped Pork Loin Wrapped with Brown Sugar and Marmalade

Pork:
1 (2-3 lb) boneless pork loin
2 Tbsp. Montréal steak spice
1 Tbsp. brown sugar
5-7 thin slices bacon

Glaze:
⅓ cup orange marmalade
⅓ cup chili sauce
2 Tbsp. packed brown sugar
2 Tbsp. Creole mustard

Preheat oven to 350°F (180°C, Gas Mark 4).

Combine the steak seasoning and brown sugar; rub the mixture all over the roast.

Put the roast in a foil-lined baking dish. Arrange bacon over the pork, tucking the ends under the roast.

Roast to about 140°F on an instant-read thermometer, or about 55 minutes.

Combine glaze ingredients. Generously brush the glaze mixture over the roast and continue roasting for 15 minutes, or until the roast registers about 155°F on a meat thermometer or instant-read thermometer.

Cover loosely with foil and rest for 15 minutes before slicing.

Makes 6-8 servings.
