Roasted Cornish Hens Wrapped in Prosciutto with Cider Apples and Potatoes
Check out this marvelous recipe of Crispin Brut Roasted Cornish Game Hen, wrapped in Prosciutto and served with potatoes and apples.
3 cups golden potatoes, thinly sliced
1½ thin wedges red onions
2 golden delicious apples
10 sprigs thyme
1 Tbsp. fresh thyme leaves
1/3 cup extra-virgin olive oil
4 (1-1½ lbs) Cornish hens
8 thin slices prosciutto
1/3 bottle Crispin Brut Cider
2½ cups chicken stock
Preheat oven to 425°F (220°C/200°C fan, Gas Mark 7).
Cooking Potatoes:
Combine potato, onion, apples, and thyme with olive oil in a roasting pan.
Add extra seasoning if you need to, roast it until it starts to colour, which should take 15 minutes or so.
Assembly:
Season Cornish hen with thyme leaves.
Wrap each hen with prosciutto. Put it on top of the potatoes, toss a little oil on top.
Add Crispin Brut Cider and chicken stock to pan.
Transfer the roasting pan to the preheated oven and bake for 40-50 minutes or until an instant-read thermometer inserted into the thickest part of the breast registers at 165°F.
Makes 4 servings.
Cook's Notes: Cornish hens are hard to find fresh, most will be frozen. They can easily be thawed overnight in the refrigerator. Them them come to room temperature before cooking, about 30 minutes. Then be sure to pay dry.
