Fried Rattlesnake

friedrattlesnakeDo you hear that rattling? That’s right, we’re going to cook up some rattlesnake today. There are a lot of different ways to cook snake, but today we’re going to deep fry this feller. Warning! Unless you’re an experienced snake wrangler, don’t just go out there in the wild and catch a snake. This recipe for fried rattlesnake is the preferred method to cook this delicious meat.

1 cup all-purpose flour, unbleached
½ cup yellow cornmeal
1 Tbsp. mesquite seasoning
½ tsp. ground cayenne
1 tsp. onion powder
2 tsp. garlic powder
2 Tbsp. cornstarch
1 cup milk
2 large eggs
oil, for frying

For fresh snake meat, clean the snake well and cover it in buttermilk overnight.

Drain the snake from the buttermilk and cut into about 3-4" pieces.

In a medium bowl, combine the dry ingredients.

In a separate bowl, whisk together the milk and eggs.

Dip the snake pieces in the milk mixtures to coat well then dredge through the flour mixtures to generously coat. Repeat to double coat.

Heat about 2" deep of fry oil in a Dutch oven or deep fryer to 350°F (180°C). Fry a few pieces of the snake at a time until golden brown. Drain and let cool on a paper towel. Serve with dipping sauce.

For the Dipping Sauce:
Whisk together 2 Tbsp. mayonnaise, 1 Tbsp. pure honey and ½ tsp. liquid smoke.
