Roasted Brazil Nuts (Brazilian Castanha-Do-Pará)
The flavour of the nuts is deep and slightly roasty with the salt adding just the right amount of seasoning. I thought maybe just salt would be too plain, but no it was perfect. I used a very good sea salt from France and I think that was a good choice with these nuts.
1 lb Brazil nut
2 Tbsp. extra-virgin olive oil
sea salt
Preheat broiler, and arrange nut meats on a cookie sheet. Drizzle 2 Tbsp. of olive oil over them.
Place under broiler for 2-3 minutes until nuts are heated through.
Remove from oven, pat nuts dry with paper towels. Place in a paper bag with salt.
Shake the bag to coat with salt and serve warm.
