Roasted Walnuts with Cayenne

Roasting them and tossing them in various spices and seasonings can transform their flavours. 3½ cups walnuts
1½ Tbsp. extra-virgin olive oil
1 Tbsp. dried onion flakes
1 tsp. granulated garlic
2 tsp. granulated onion
1 tsp. sea salt
⅛ tsp. ground cayenne

Preheat the oven to 350°F (180°C/160°C fan, Gas Mark 4) and line a baking sheet with parchment paper and set aside.

Add the walnuts to a large mixing bowl and drizzle them with the olive oil. Using a spoon stir the nuts to coat them well with the oil.

In a small bowl add the remaining ingredients and stir them well. Sprinkle the mixture over the olive oil coated nuts and stir them well to evenly distribute the seasonings.

Pour the nuts onto the prepared baking sheet and spread them out evenly across the pan.

Roast for 10-12 minutes, checking and stirring them around a couple of times to ensure they aren't burning. Ovens can run at different temperatures so be on the lookout from 8 minutes on.

Once removed from the oven allow to cool for 10-15 minutes.

Store covered at room temperature for up to 2 weeks.

Makes 20 servings.

  • As a snack, out of a little bowl.
  • Add them to your salads. Nuts add wonderful crunch and texture as well as healthy fats that keep you satiated (full).
  • On a charcuterie or fruit and cheese board. This flavour of this savoury roasted nuts recipe would compliment a platter of sweet fruit and mild cheese.
  • Give as gifts. Put them in a little jar and wrap them with a ribbon or a bow.
