Lime Sorbet
If you've ever had lime sorbet in a restaurant and found it mouthwatering, you'll want to put this recipe for a homemade sorbet to use. Sorbet is a healthier alternative to high-fat ice cream or other desserts. Before you prepare this meal, know that lime oil has a bit of natural sweetness in it. That’s why a teaspoon of fresh lime zest is used in this sorbet recipe. You can try this dish as either a light dessert or as a palate cleanser between courses if you're preparing a special three-course meal for your friends, family or another occasion entirely.
1 cup water
1 cup sugar
1 cup lime juice, freshly squeezed
1 tsp. lime zest, freshly grated
In a medium saucepan over medium heat, bring the water, sugar and lime juice to a simmer. Take care not to overcook this mixture.
Next, you'll need to cover the pan and then lower the heat slightly. You'll proceed to cook the concoction for about three minutes or until all of the sugar is dissolved. Remember not to overcook or burn the mixture.
Then, you'll remove the mixture from the heat and cool it to room temperature. Next, stir in the lime zest.
You'll need to chill the mixture for at least two hours. This is important to note if you're planning to serve dinner and dessert at a certain time. Make sure you allow enough time to allow the sorbet the chill.
Freeze in an ice cream maker, according to the manufacturer’s instructions.
Makes 6 servings.
Cook's Notes: Remember, that while one cup of lime juice might not seem like a lot, it can be difficult to get that much juice for limes that aren't yet ripe. Squeeze the limes at the grocery store (or farmer's market) to make sure they're ready for consumption. If you're not sure, you can buy numerous limes to make sure you'll have the juice you need for this recipe.
