Peach Granita
Looking for a cool, healthy treat? This icy dessert is full of fruit and little else.
4 ripe peaches (about 1½ lbs), peeled, halved, pitted, and coarsely chopped
½ cup water
¼ cup raw sugar + more if needed
1 Tbsp. lemon juice, freshly squeezed
coarse sea salt
2 tsp. fresh basil, finely chopped (optional)
Purée peaches, water, raw sugar, lemon juice, freshly squeezed, and ¼ tsp. salt in a blender; add more raw sugar to taste. Transfer to an 8" square baking dish. Freeze for 2½ hours, scraping with a fork every hour (mixture should be icy and fluffy). Stir in basil.
Makes 8 servings.
Cook's Note: This granita goes beautifully with fresh cherries.
