One Pot Pasta (Chicken, Brussels Sprouts and Mushrooms)
You'll only have to dirty one pot in this easy pasta recipe that cooks chicken and vegetables right along with the noodles. Plus, by using the exact amount of water you need to cook the pasta, the starch that usually gets drained off with your pasta water stays in the pot, giving you delectably creamy results.
8 oz whole-wheat linguine or spaghetti
1 lb chicken thighs, boneless, skinless
4 cups mushrooms, sliced
2 cups Brussels sprouts, sliced
1 medium onion, chopped
4 cloves garlic, thinly sliced
2 Tbsp. Boursin cheese
1¼ tsp. dried thyme
¾ tsp. dried rosemary
¾ tsp. sea salt
4 cups water
2 Tbsp. fresh chives, chopped
Combine pasta, chicken, mushrooms, Brussels sprouts, onion, garlic, Boursin cheese, thyme, rosemary and salt in a large pot. Stir in water.
Bring to a boil over high heat. Boil, stirring frequently, until the pasta is cooked and the water has almost evaporated, 10-12 minutes.
Remove from heat and let stand, stirring occasionally, for 5 minutes. Serve sprinkled with chives.
