Tomato Butter Sauce (Gordon Ramsay)
Gordon Ramsay’s tomato butter sauce recipe focuses on building layers of flavour through careful technique rather than complicated ingredients. The foundation starts with a proper soffritto of shallots and garlic, followed by high-quality San Marzano tomatoes that are hand-crushed to maintain texture. Unlike traditional marinara sauces, this Gordon Ramsay tomato butter sauce incorporates cold butter at the end, creating an emulsion that gives the sauce its signature glossy finish and rich mouthfeel. The process requires patience - rushing the butter incorporation will cause the sauce to break. Temperature control is crucial throughout. The initial cooking happens at medium-low heat to prevent the aromatics from browning, while the tomatoes simmer gently to concentrate their natural sweetness. Professional kitchens use this technique because it creates a sauce that clings perfectly to pasta without being heavy. The butter doesn’t just add richness - it creates a proper emulsion that coats each strand evenly, which is why restaurant pasta always tastes better than homemade attempts.
Rich, restaurant-quality tomato butter sauce with Gordon Ramsay’s signature techniques for perfect flavour balance and silky texture.
2 lbs San Marzano tomatoes, crushed by hand
6 Tbsp. European butter cold, cubed
2 large shallots, finely minced
4 cloves garlic, thinly sliced
1 tsp. sea salt
½ tsp. black pepper, freshly cracked
8-10 leaves fresh basil, torn by hand
Heat a heavy-bottomed saucepan over medium-low heat. Add 2 Tbsp. of butter and let it gently melt without browning.
Add minced shallots to the melted butter and cook for 2-3 minutes until softened and fragrant, stirring constantly.
Add sliced garlic and cook for another 30 seconds, being careful not to let it brown or burn.
Add the hand-crushed San Marzano tomatoes with their juice. Season with salt and pepper, then bring to a gentle simmer.
Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally, until it reduces and thickens naturally.
Remove from heat and immediately whisk in the remaining cold butter cubes one at a time until the sauce becomes glossy and emulsified.
Stir in torn fresh basil leaves and adjust seasoning with salt and pepper. Serve immediately over pasta or store covered.
Makes 4 servings.
Cook's Notes:
- Always use cold butter and add it off the heat to prevent the sauce from breaking.
- San Marzano tomatoes are worth the investment for authentic Italian flavour.
- The sauce can be made ahead but add fresh butter just before serving for best texture.
