Orzo with Parmesan and Basil

orzoparmesanbasilFor a flavourful treat, Sauté rice-shaped orzo in butter before simmering in chicken stock. Stir in Parmesan cheese and fresh, chopped basil. Garnish with sprigs of basil to serve.

2 Tbsp. butter
1 cup orzo pasta, uncooked
1 (14.5) oz can chicken broth
½ cup Parmesan cheese, grated
¼ cup fresh basil, chopped
sea salt
black pepper, freshly cracked
2 Tbsp. fresh basil, chopped

Melt butter in heavy skillet over medium-high heat. Stir in orzo and Sauté until lightly browned.

Stir in chicken stock and bring to boil. Cover.

Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15-20 minutes.

Mix in Parmesan cheese and basil. Season with salt and pepper.

Transfer to shallow bowl. Garnish with basil sprigs.

Makes 4 servings.
