Sugar Pie (French Canadian Tarte au Sucre avec Lait)
This French Canadian Sugar Pie is as Canadian as Poutine. Super easy to make as well. Growing up on the east coast of Canada, I had the pleasure of indulging in some pretty unique dishes not typically found in other parts of the world.
Pastry:
1 recipe Single Pie Crust
Filling:
2 cups light brown sugar
2 Tbsp. all-purpose flour, unbleached
1 cup milk
2 Tbsp. unsalted butter, melted
1 egg, beaten
Make the pie dough, wrap in plastic and place in the refrigerator until ready to use.
Preheat oven to 400°F (200°C/180°C fan, Gas Mark 6).
In a saucepan, bring brown sugar, flour and milk to a boil. Cook slowly until the sugar has dissolved, about 5 minutes. Remove from heat and let cool slightly.
Add the beaten egg and melted butter and mix with a hand mixer. Pour into the pie shell.
Bake for 35 minutes, remove pie, and cover rim with foil to prevent burning.
Return to the oven and bake for another 15 minutes.
Makes 8 servings.
