Margarita Popsicles with Basil Peach
Fresh basil and peaches come together in these boozy and refreshingly simple margarita popsicles. Use frozen peaches if they are not in season or fresh if they are. Adjust the amount tequilla according to your taste.
1 (16 oz) pkg frozen peaches, thawed
¾ cup peach nectar
1 Tbsp. lime juice, freshly squeezed
3 Tbsp. pure honey
1/3 cup tequila
¼ cup basil, coarsely chopped
In a food processor, combine peaches, peach nectar, lime juice, honey, tequila and basil. Blend just until combined.
Pour mixture into popsicle molds. Place in freezer for 30 minutes, insert popsicles stick.
Let popsicles stand in freezer for several hours to set completely.
Makes 8 servings.
