3 lbs chicken wings
¼ cup Cajun Spice
Barbeque Sauce:
½ cup onion, finely chopped
¼ cup canola oil
3 tsp. garlic, minced
1½ cups organic tomato ketchup (not Heinz)
½ cup cider vinegar
½ cup packed brown sugar or pure honey
1/3 cup Worcestershire sauce
2 tsp. chili powder
½ tsp. cayenne pepper
½ tsp. ground cumin
1 Tbsp. sriracha sauce
2 Tbsp. lime juice, freshly squeezed
Garnish:
fresh parsley, minced
Preheat your oven to 400°F (200°C).
Season the chicken wings with the Cajun seasoning, making sure they are well covered. Place in the oven and cook for 30-35 minutes, turning halfway.
For barbecue sauce: In a large saucepan, sauté onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the ketchup, vinegar, brown sugar, Worcestershire sauce, chili powder, cayenne and cumin. Simmer, uncovered, for 8-10 minutes, stirring often. Remove from the heat; stir in sriracha sauce and fresh lime juice. Set aside 2/3 cup for serving.
Brush the chicken wings with the BBQ sauce on both sides. Place the wings back into the oven and broil on high on both sides for 3-4 minutes or until sauce is carmelized.
Serve topped with fresh parsley and Barbeque Sauce for dipping.
