Bacon-Wrapped Chicken Breasts with Brown Sugar

baconwrappedchickenbreastsbrownsugarChicken breasts seasoned with brown sugar and spices, then wrapped in bacon and baked until caramelized. An easy chicken dinner with only 10 minutes of prep time.

6 Tbsp. brown sugar, divided
2 tsp. ground smoked paprika
½ tsp. garlic powder
¼ tsp. onion powder
½ tsp. sea salt
½ tsp. black pepper, freshly ground
4 (6-8 oz) chicken breasts, boneless, skinless
8-12 slices bacon, do not use thick cut

Preheat the oven to 375°F (190°C/170°C fan, Gas Mark 5). Line a baking sheet with foil and place an oven-safe rack over the baking sheet.

If the breasts are uneven in thickness, place them between 2 sheets of plastic wrap and pound them to an even 1” thickness using the flat side of a meat pounder.

In a small bowl, mix together 4 Tbsp. brown sugar, smoked paprika, garlic, onion, salt and pepper. Rub the spice mixture all over the chicken breasts.

Wrap each chicken breast in 2-3 slices of bacon. Place the chicken breasts, seam side up on the prepared baking pan and bake for 15 minutes.

Remove the chicken from the oven and flip over to be seam side down. Sprinkle the remaining 2 Tbsp. brown sugar evenly over the top of the chicken. Continue cooking for another 15 minutes or until the internal temperature of the chicken reaches at least 160°F and the bacon is fully cooked.

If you prefer extra crispy bacon, turn the heat up to 450°F (230°C/210°C fan, Gas Mark 8) and roast for 5-10 minutes more until the bacon is crispy.

Let them rest for 5 minutes so that the internal temperature of the chicken increases to 165°F and the juices are distributed.

Makes 4 servings.
