Caesar Salad (Granny's)

caesarsaladGranny loves loads of healthy garlic.

Dressing:
8 cloves garlic, chopped
4 Tbsp. red wine vinegar
1 cup mayonnaise
4 anchovy fillets
2 tsp. Worcestershire sauce
2 tsp. Dijon mustard
2 tsp. lemon juice, freshly squeezed
½ cup Parmesan cheese, grated
¼ cup extra-virgin olive oil
1 tsp. black pepper, freshly cracked

Salad:
2 heads romaine lettuce (~ 10 oz each), outer leaves discarded, inner leaves cut into 1" wide strips
1 recipe Sourdough Croûtons
2 Tbsp. Parmesan cheese, shaved

For the Dressing:
In a food processor or blender, purée all ingredients except the olive oil until smooth. Slowly add the olive oil through the feeder tube until creamy and emulsified. Check for seasoning and adjust to taste. Store in the fridge until ready to serve.

For the Salad:
In a large serving bowl, toss lettuce with vinaigrette and reserved croûtons.

Serve immediately, garnished with shaved Parmesan.

Makes 4 servings.
